#TastyTuesday - Yummy Banana Muffins!
bebe and I love bananas, but we apparently don't love them as much as I always think while we're in the store. Case in point: last week I picked up a bunch of bananas. Eight, in all. But eight is more than bebe and I can eat in a week (RadioMan hates bananas with a fiery passion). The beauty of this is banana bread, which is probably why I still don't really count the bananas in the bunch...I just pick up the prettiest ones and see where we end up.
This time we had four left over - the perfect amount for banana muffins! - even if they did turn out a little flat. lol they taste great, even though they look a little weak. Which brings me to today's Tasty Tuesday recipe...for yummy banana muffins!
Ingredients:
1 cup of Miracle Whip salad dressing
1 cup of bananas, mashed up
3/4 cup of brown sugar
2/3 cup of whole wheat flour
1/2 tsp baking soda
1/2 tsp salt
Directions:
Pre-heat the oven to 350 and spray your muffin pan with PAM or whatever cooking spray is your favorite. In a large mixing bowl mix the bananas and sugar; then fold in the miracle whip, flour, baking soda and salt. You'll mix this entire mixture just until it's moist. Fill the muffin cups about 3/4 full with the mixture and then cook for 25-30 minutes or until a golden brown around the edges.
Serves: 12-16 muffins, depending on cup size

I've never seen that recipe before! It definitely looks interesting!
